My mornings have never been tastier!
I am such an oat fan! I loove them in any form - baked, cooked, soaked, fried - I love them all. There's countless variations to prepare oats, but I must say, that overnight oats are one of my favorite ways to do oats - especially in warmer days like nowadays. Here's lots of opinions on having oatmeal for breakfast, some people even see it as such an unhealthy one, which I can't relate to at all! At least not with the recipe I use. Raffaello Overnight Oats
The ingredients:
These measurements are for a single serve recipe. Feel free to adjust according to your needs and preferences if needed.
45g gluten free old fashioned oats
30g vanilla vegan protein powder
1 tbsp grated coconut
1 tbsp ground flax seeds
pinch of salt
145g of coconut milk
Gluten free granola of choice
4 tbsp of plain/coconut vegan yogurt
Toasted coconut flakes for toppings
The procedure:
Step 1. Prepare a medium mixing bowl and combine measured: oats, protein powder, grated coconut, flax seeds and pinch of salt.
Step 2. Add in measured coconut milk and mix well. Let it sit aside for approximately 5 minutes.
Step 3.Take your favorite jar and start layering in the order of: granola - yogurt - oatmeal mixture - yogurt - oatmeal mixture - yogurt.
Step 4. Add coconut flakes to the top and refrigerate overnight or for at least 1 hour before serving.
