The holiday festive season is definitely here and all of the christmassy recipes with it! Today I'd love to share with you one of my favorite Christmas cookies, that I make every year. These healthier gingerbread cookies are vegan, refined sugar free and gluten free! This small batch recipe is going to be perfect for those days, when you're craving a little something, but don't want to be baking for the whole town! Let's dive in!!

Why Make These Healthy Gingerbread Cookies?
I mean... who doesn't like good memade cookies, made from natural ingredients, that taste absolutely delicious?? They're made with a slight twist, which means no refined sugars or unhealthy fats—just ingredients loaded with all the flavors and nutrients.
On the top of that, they're suuper easy to make. Just put all of the ingredients into a blender, make a small balls, then shape into thin cookies and bake! That's it. :))
Ingredients You'll Need:
(This gingerbread cookie recipe makes about 5-7 pieces, depending on the size)
60g pitted medjool dates
25g soy milk
35g almond butter
1 tsp gingerbread seasoning
40g almond flour
1/2 tsp baking powder
pinch of salt
For toppings: Melted dark chocolate & mini sugar gingerbread decorations. (optional)
The Procedure:
Step 1. Preheat the oven to 180 degrees Celsius.
Step 2. Prepare a high speed blender and add in all of the ingredients. Blend properly into a thick cookie dough.
Step 3. Create a similar sized balls (I like to use my hands), place on a baking tray lined with baking paper & smash each ball into a shape of a thin cookie. Repeat until you use all of the dough.
Step 4. Bake for approximately 13-15 minutes.
Step 5. Once baked and cooled, optionally, decorate with melted chocolate & sugar decorations.
Storing Your Cookies
If these cookies manage to last more than a day, keep them in an airtight container at room temperature for up to a week. :)
