The cozy season is definitely here and I can't get enough of all of the cozy & delicious recipes that come with it. These Oatmeal & Pecan Christmas Cookies are one of the best ways to fill your home with Christmas spirit, make it smell extra cozy and festive.

Why You’ll Love These Cookies


Oatmeal & Pecan Christmas Cookies are 100% representation of coziness and comfort. They're packed with wholesome ingredients, are nice and crunchy on the outside whilt being soft and little chewy on the inside. The oats bring a chewy richness on the inside, while the pecans add a great nutty crunch on the outside.


On the top of it, they're fully vegan, gluten free and refined sugar free!


Ingredients You’ll Need:


  • 180g gluten free oats

  • 50g almond butter

  • 40g pecans

  • 20g vegan butter

  • 110g soy milk

  • 40g organic maple syrup

  • 1/3 tsp salt

  • + ideally homemade raspberry jam for top filling



The procedure:


Step 1. Preheat the oven to 170 degrees celsius.


Step 2. Prepare a kitchen mixer or a blender and blend all of the ingredients together.


Step 3. Prepare a baking tray lined with baking paper, create a small, similar sized balls from the dough, place one by one next to each other and press each one using your hands into a cookie shape.


Step 4. Using a small knife or a spoon, create a little heart in the middle in order to make space for the raspberry filling.


Step 5. Bake for approximately 10-12 minutes, until nice and brown.


Step 6. Once the cookies are baked and fully cooled down, add your raspberry filling into each cookie and leave it set for at least 1 hour.


Storing Your Cookies


If you happen to have leftovers, these cookies are best stored in an airtight container at room temperature for up to one week. For longer storage, freeze them for up to three months. Just be sure to separate layers with baking paper to prevent sticking.
